Ingredients: (I double this recipe for my own family of 5)
6 Large Eggs
1 Cup of Milk
1 Cup of Flour
1 Tsp of Vanilla
½ Tsp of Salt
¼ Cup or less of Sugar (I use very little)
2 Tbs of Butter
Powdered Sugar for sprinkling
Maple Syrup and Butter for the table
Preheat oven to 400.
Whisk eggs, milk, flour, sugar, vanilla and salt in a large bowl. Don’t worry about getting all the lumps out. Melt butter in the large skillet you plan to put in the oven, pour the batter into the skillet and place in the oven. Bake for 20-22 minutes (even if you’ve doubled the recipe)! Remove from the oven and carefully slide the pancake onto a serving platter. Sprinkle with the powdered sugar and serve immediately! Simple and delicious.
We enjoy our pancake with butter and maple syrup. You could also drizzle chocolate over cut up strawberries.
